Green Bean Savoury

Serves 4

680g green beans
2 tbsps vegetable oil
1 small onion, finely chopped
1 clove garlic, crushed
2 sticks celery, chopped
2 carrots, shredded
1 tsp dried basil or 1 tbsp chopped fresh basil
salt and freshly ground black pepper to taste
4 tbsps vegetable stock or water
55g parmesan cheese, grated

Steam the beans until just tender. Heat the oil in a frying pan and saute the chopped onion and garlic, stirring constantly.

Add the celery and carrot and saute for 3-4 minutes, stirring often.

Add the cooked beans, basil, salt and pepper. Pour in a little stock if necessary if the contents of the pan seem dry. Cover the pan and simmer over a low heat for 5 minutes.

Remove the pan from the heat and stir in half the Parmesan cheese. Pour the savour into a warmed serving dish, top with the remaining cheese and serve immediately.

Serve with rice or quiche.

I really, really liked this. I had it with rice and it was just lovely.
