Mushroom And Potato Hotpot

Serves 2

1 onion, chopped
1 tbsp oil
200g mushrooms, quartered
knob of butter
400g can chopped tomatoes
1 tsp mushroom ketchup
1 tsp muscovado sugar
sprinkling of tabasco sauce
1 tbsp tomato puree
200g potatoes, cooked and sliced
melted butter

Pre-heat oven to 190C/375F/Gas 5. Cook onion in oil until brown. Add mushrooms and knob of butter and cook for 5 minutes. Add all other ingredients except potatoes and melted butter. Layer mushroom mixture and potatoes into an ovenproof dish, finishing with a layer of potatoes. Brush with melted butter. Bake in pre-heated oven for 30-35 minutes until brown.

I'm not known for my love of spice, being unable to even tolerate black pepper, but even I can stand the tabasco in this, but then my sprinkling might be much, much, much less than anothers!
