Chickpea & Sweetcorn Stew

Serves 2

1 onion, chopped
1 clove garlic, crushed
1 tbsp olive oil
400g can chopped tomatoes
400g can chickpeas, drained
200g can sweetcorn, drained
sprinkling of thyme

Pre-heat oven to 200C/400F/Gas 6. Fry onion and garlic in oil until brown. Transfer to casserole dish and mix in other ingredients. Cook in pre-heated oven for 35 minutes.

I love how quick this is and it's so warming too, has that feel of comfort food about it.
