Vegetable Pie

Serves 2-4

1 onion, chopped
1 carrot, diced
2 celery sticks, chopped
1 clove garlic, crushed
3 tbsp oil
200g mushrooms, quartered
knob of butter
2 tbsp parsley, chopped
glass of dry white wine or cider
black pepper
3 sheets filo pastry
melted butter

Pre-heat oven to 190C/375F/Gas 5. Fry onion, carrot, celery and garlic in oil until soft. Add mushrooms and knob of butter and cook for a further 5 minutes. Mix with parsley and wine and season. Place in pie dish. Cover with filo pastry, brushing each sheet well with melted butter. Bake in pre-heated oven for 30-35 minutes until brown and crisp.

I love pastry, whether it's savoury or sweet. Although I'm the kind of girl that needs to buy her pastry ready made. I just don't have pastry skills!
