Chocolate Mousse

Serves 2

50g plain chocolate
2 eggs, separated
1 chocolate flake, crumbled

Melt the chocolate in a bowl over some hot water. Beat the egg yolks and add to the chocolate. Whisk the egg white until stiff and then stir into the chocolate mixture. Fold in the flake, reserving a little for serving. Divide mousse into 2 ramekins, and before serving sprinkle with remaining flake.

This is so incredibly good. I love it. It's so simple and easy but is always, always excellent.
I'm hungry just thinking about it.
