Potato, Mozzarella & Garlic Pizza

Serves 2

350g small new or salad potatoes
3 tbsp olive oil
2 garlic cloves, crushed
1 pizza base
1 red onion, thinly sliced
150g mozzarella cheese, grated
2 tsp fresh rosemary or sage
salt and ground black pepper
2 tbsp freshly grated Parmesan cheese, to garnish

Preheat the oven to 220C/425F/ Gas 7. Cook the potatoes in boiling salted water for 5 minutes. Drain well and leave to cool. Peel and slice thinly.

Heat 2 tbsp of the oil in a frying pan. Add the sliced potatoes and garlic and fry for 5-8 minutes turning frequently until tender.

Brush the pizza base with the remaining oil. Scatter the onion over, then arrange the potatoes on top.

Sprinkle over the mozzarella and rosemary or sage and plenty of black pepper. Bake for 15-20 minutes until golden. Remove from the oven, sprinkle with Parmesan and more black pepper.

I liked this, but would have liked to make my own pizza base as the ready made ones were rather more like a biscuit which detracted a little from it for me. Also I skipped all the black pepper, but I loved the taste of the rosemary and it smelled great when it was cooking.
