Vegetable Chow Mein

Serves 2

1 onion, finely sliced
2 tbsp groundnut oil
2 sticks celery, finely sliced
100g mushrooms, sliced
1 pepper, diced
1 tbsp soy sauce
1 tbsp sherry or dry Martini
1 tsp sugar
1 tsp wine vinegar
100g fresh noodles
100g fresh beansprouts

Fry the onion in oil until starting to colour. Add the rest of the vegetables and continue to stir-fry fro 3 minutes. Add soy sauce, sherry and wine vinegar and cook for another minute. Finally, stir in noodles and beansprouts and stir-fry for 2 minutes. Serve immediately.

I love stir-fries, they're just so incredibly quick and easy. This is lovely, in my not so humble opinion!
