4 medium/large tomatoes, sliced
250g small artichoke hearts in oil, halved
350g buffalo mozzarella cheese, sliced
2 avocados, peeled and sliced
2 tbsp fresh basil, chopped
thick french dressing
salt and pepper
Cover one quarter of a small plate with the prepared avocado. Repeat for the tomatoes, artichoke hearts and mozzarella. Drizzle the dressing over the plates and season well.
I think this dish contains so many wonderful flavours that you just can't go wrong. Tomato and avocado are just so perfect together, in my humble opinion! I love artichoke too, but it's one of those things you rarely get to eat.
