10 thin slices bread
2 x 400g chopped tomatoes
2 tbsp chopped fresh parsley
2 tbsp chopped fresh basil
salt and pepper
250g mozzarella, thinly sliced
Preheat the oven to 200C/400F/ Gas 6. Grease a 750ml ovenproof dish.
Beat together the eggs and milk, dip the bread into this mixture and arrange a third of the slices over the base of the dish.
Pour a third of the tomatoes over the bread and sprinkle with some of the herbs.
Season well and then top with some of the cheese.
Continue layering in this way, finishing with tomatoes and herbs.
Reserve a few slices of cheese.
Bake in the oven for 30 minutes, then arrange the remaining cheese on top and return to the oven until it has melted and browned.
Serve with peas or any other green vegetable.
